Nicole Brown

Senior
Nutritional Sciences/Dietetics Double Major

Nicole joined our research team during spring of 2016. She is actively participating in recruitment and for both GRAPE and fructose studies.

She is interested in nutrient metabolism. After completing the dietetic internship, she plans on becoming a Registered Dietitian and following her passion to work in a research facility.


Stephanie Kramer

Senior
Nutritional Sciences/Dietetics Double Major
Biology Minor


Stephanie joined our research team during spring of 2016. In the lab, she helps with recruitment for the GRAPE and Fructose studies. She is also involved in processing specimens from participants taken during the study visits.

After obtaining her undergraduate degree, she plans to go to PA school and become a Physician’s Assistant. Her goal is to use her nutrition background to help advise patients and provide a preventative treatment approach.


Nicole Kushner

Nicole joined Dr. Chai’s lab in Fall 2016. She is actively involved in recruitment, data collection, and conducts baseline, screening, and final visits for the current GRAPE and Fructose studies. Nicole was selected as the 2017 Delaware INBRE Scholar and her research project looks into the effects of Dietary Fructose and 24 Hour Blood Pressure in Normotensive Older Adults. 

After graduating, Nicole plans on applying to medical school and becoming a doctor. She is interested in pursuing a future in medicine and her goal is to use nutrition as a way to advise her patients to maintain a healthy lifestyle.

Xiangyi He 

Senior
Dietetics Major
Management Information Systems Minor

Xiangyi joined Dr. Chai’s lab in Spring 2017. In the lab, she helps with recruitment for the GRAPE and Fructose studies. She is also involved in processing specimens from participants taken during the study visits and data entry.

Xiangyi plans to complete a dietetic internship and become a Registered Dietitian. She is interested in getting her Masters degree and pursuing a future as a clinical dietitian.


Cara Cicalo

Junior
Dietetics Major

Cara joined the team in Spring of 2017 as a sophomore. She was selected as a 2017 Summer Scholar. She is examining the effects of whole grape consumption on cognitive function and emotional status in postmenopausal women.

After graduating, Cara is interested in pursuing a master’s degree in nutrition along with completing the dietetic internship to become a Registered Dietitian.


Jessica McMahon

Senior
Medical Laboratory Science Major
Biological Sciences and Forensics Minor

Jessica joined Dr. Chai’s lab in Summer 2017 after being selected as the 2017 Delaware INBRE Scholar. Her research project investigated the effects of tart cherry juice on biomarkers of vascular function. After graduation, Jessica will be working at Christiana Hospital as a medical laboratory scientist. She is interested in pursuing a future in the fields of both medical laboratory science and forensic science, and her goal is to become active in the medical community as a voice in support of furthering the professions.

Jing Luo

B.S. in Dietetics

Jing worked in Dr. Chai’s lab for four semesters. She was involved in the recruitment for the GRAPE study and was responsible for specimen processing. Jing was selected as a 2016 Summer Scholar and conducted research on the association between dietary fatty acids and cognitive function in older adults under the mentorship of Dr. Chai. Jing presented her research findings at the 2017 Annual Conference of Experimental Biology (EB).

Jing graduated in May 2017 and is completing her dietetic internship with plans of pursuing a master’s degree in nutrition.


Krystal Lee

B.S. in Dietetics 

Krystal has worked in Dr. Chai’s lab for four semesters. Krystal assisted with conducting screening, baseline, and final visits for the GRAPE study. She was selected as a 2016 Summer Scholar and conducted research on the association between antioxidants and bone density in adults under the mentorship of Dr. Chai.

Krystal was accepted into a dietetic internship and is on her way to becoming a Registered Dietitian. She is interested in pursuing a future as a food service dietitian.


Julia Saltzgiver

B.S. in Dietetics
Psychology Minor

Julia has worked in Dr. Chai’s lab for four semesters. She greatly assisted with the CHERRY and GRAPE study as the secondary research assistant. She is responsible for conducting participant screening, baseline, and final visits for the GRAPE study.

Julia has graduated with her bachelor’s degree in May 2016 and is currently employed by WIC in Ocala, Florida.


Danielle Falk

B.S. in Dietetics

Danielle has worked in Dr. Chai’s lab for four semesters. She helped with recruitment and data entry in the previous CHERRY study as well as the GRAPE study.

Danielle hopes to become a Registered Dietitian and a Certified Specialist in Sports Dietetics. She graduated May 2016 with a bachelor’s in dietetics and is currently working as a school food service manager for the NYC Department of Education.
