Acidified Food School

The 2013 Acidified Foods GMP School will be held in Raleigh, NC on April 29 – May 1, 2013. Individuals doing acidified foods processing are required by the FDA to successfully complete the GMP School. The school provides instruction in food handling techniques, food protection principles, personal hygiene, plant sanitation, pH controls, critical factors in acidification, and more.

The school is jointly sponsored by the North Carolina Cooperative Extension Service and NCSU Department of Food Science, in cooperation with the Food Science Research Unit, USDA ARS, Raleigh, NC, and the Food & Drug Administration, U.S. Department of Health & Human Services.

Producers interested in doing pickled products as a value-added business venture should attend this school.
