French Tradition: La Raclette

Submitted by Kara Kimos the 2024 Spring program in Aix-en-Provence, France

Today I wanted to share a French recipe/tradition that I learned from my French coworkers! “Raclette” is a French dish that is essentially a create-your-own fondue dining experience.

There is a central grill on the table that cooks the charcuterie and other toppings. Underneath of the grill, each person can place their own tiny personal pan that they use to cook the cheese. When your cheese has melted, you scrape it off of your personal pan with a small wooden paddle, and you can put it on your plate!

Other than charcuterie, you also eat the fondue with potatoes and any other items you might like. My coworkers came up with a vegetarian version for me using potatoes, cherry tomatoes, and mushrooms which I greatly appreciated and enjoyed.

While you might not have a specific raclette grill lying around your home in the US, I definitely recommend trying this traditional French meal upon visiting France! (Submitted on March 4, 2024)
