Wow! Week two has flown by here in Santiago, Chile! We started off the week with an amazing cooking class taught by two nutrition professors from the Universidad Mayor. Dressed in hairnets and aprons, we began cooking traditional Chilean cuisine. We made empanadas de queso and de pino, pebre, charquican, and Chilean salad. For dessert, we were served huesillo con mote. This is a dish served in a cup with barley on the bottom, a peeled peach on top, and covered in a very sweet peach flavored liquid. The best part of the class was getting to eat all of the food afterwards! It was absolutely delicious! The other big thing we did this week was to visit the old abandoned mining city of Sewell. It was a three hour drive into the middle of the Andes Mountains and we learned all about the history of copper mining in Chile.
